To search and replace in more than one document, ensure that all these documents are open in InDesign. Select the Find Color dropdown, and select the color you want to find. Select the Change Color dropdown and select from the saved color swatches. You can also add and select a new swatch by choosing Select New Color Swatch > Add.

CMYK can't produce neon colors because it's ink. It's a subtractive color space meaning the less ink, the brighter the color. The way you get neon green is using a custom spot color ink. The most common spot color library is Pantone. If you show a print shop your RGB color they can convert it for you to a spot color using the Pantone matching
When added to a pure white image, these colors mask others: cyan absorbs red, magenta absorbs green, yellow absorbs blue, and black absorbs everything. This color absorption is why the CMYK color model is known as a subtractive process. Graphic designers set the intensity of each CMYK channel to produce their desired colors.
Photos were originally RGB, I printed from InDesign both Transparence blend space set to RGB or to CMYK obtaining in both cases the same wrong result (text okay, photos wrong colors).
